kcalWhat You’ll Need For Grilled Veggie Kabobs
2 large bell peppers (red, green, or yellow), cut into chunks
8 oz mushrooms, cleaned and halved
2 medium zucchinis, sliced into rounds
1-pint cherry tomatoes
1 large purple onion, cut into chunks
1 cup baby potatoes, boiled until slightly tender
Wooden or metal skewers
Marinade For The Grilled Veggie Kabobs:
1/4 cup olive oil
2 tablespoons balsamic vinegar
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
Directions
- To Make the Marinade: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, dried thyme, salt, and black pepper. Set aside.
- Prep the Veggies: Clean and chop the bell peppers, mushrooms, zucchini, cherry tomatoes, and purple onion. Boil the baby potatoes for a short period of time only then chop them also like what you did with the rest of the veggies.
- Marinate the Veggies: In a large mixing bowl, add all the chopped veggies and baby potatoes. Pour the marinade over the veggies and toss gently to coat evenly. Let it marinate for at least 10 minutes to allow the flavors to meld.
- Assemble the Kabobs: Preheat your grill to medium-high heat. Thread the marinated veggies onto skewers, alternating the colors and textures to make them visually appealing.
- Grill the Kabobs: Place the Kabobs on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the veggies are tender and slightly charred.
- Serve and Enjoy: Remove the kabobs from the grill and serve hot. These grilled veggie kabobs are perfect as a main course or as a scrumptious side dish alongside your favorite grilled meats. Enjoy the burst of flavors and the delightful combination of textures in every bite.
