An easy strawberry cake is the perfect summer treat!
Especially because strawberries are in season, and it’s a refreshing twist to a regular pound cake (though those are absolutely delicious too!)
Strawberries are filled with vitamin C and manganese, which are great for heart health and regulating blood pressure because of all the potassium they contain.
This cake is pretty easy to make and only takes about 45 minutes to cook in the oven. So it’s great when you’re multitasking and getting a couple of things done in the kitchen.

How do I make a cake more moist?
Some things you can do to make your cake more moist is to make sure you’re using real butter instead of margarine, since one has more water than the other, which tends to be a drying agent. Also, another way to make sure your cake is more moist is adding a bit of extra oil.
Make sure you aren’t over mixing your cake batter, as stiff can make your cake come out stiffer. When you store your cake, make sure you keep it in an airtight container or wrap it if you can, to make sure you keep as much air out as you can.

If you don’t like yogurt in this cake recipe, try substituting it with sour cream. This can also be a moistening agent in cake recipes.

Really there’s no surefire way to cut your strawberries for your cakes. If they’re for decoration to top off your cakes, then you obviously want to cut them nicely. I personally like cutting them long ways to top off my strawberry cakes.
Now, for the strawberries that go in the cake, you can simply chunk them into the size pieces of your liking.

One great way to know if your cake is under cooked is to simply stick a clean thin knife in the middle of the cake. If it comes out clean, meaning without bits and streaks of batter attached to it, then your cake is fully cooked.

If it comes out with bits of batter and cake bits attached to it, it means it needs more cook time. You can also use toothpicks to test this, it doesn’t have to be a knife (I just always like grabbing the first knife I see within reach).

Easy Strawberry Cake
Ingredients
- 1 1/2 cups cups plain Greek yogurt
- 1 1/2 cups Sugar
- 6 tbsp Oil
- 2 tsp Almond extract
- 3 Eggs
- 2 1/2 cups Flour
- 2 tsp Baking powder
- 3/4 tsp Salt
- 2 tsp Cinnamon
- 11/2 cups Fresh strawberries, chunked
Instructions
- 1. Preheat oven to 350 degrees. 2. Grease a 9 by 13 inch pan. Set aside. 3. Mix the yogurt, sugar, oil, and almond extract together until smooth. 4. Add the eggs one at a time, beating well after each egg. 5. Add the flour, salt, cinnamon, and baking powder stirring until smooth. 6. Fold in the strawberries and gently stir. 7. Pour the batter into the prepared pan. 8. Bake for 1 hour (check it after 45 minutes) or until the edges are set and the knife inserted into the center comes out clean.
