What cuts of pork are good for Italian pork stew?

If you’re a pork aficionado like me, you know that choosing the right cuts for a slow-cook pork masterpiece is an art in itself.

Let’s dive into the juicy details of the pork cuts that will take your stew from “yum” to “YUM-MY!”

  • Pork Shoulder (Pork Butt): Oh, the glorious pork shoulder!

This cut, also known as pork butt (don’t ask me why, it’s a culinary mystery), is my top pick for Italian pork stew.

It’s a flavor powerhouse with just the right amount of marbling and connective tissue.

During the slow cooking process, that magic happens—the marbling melts away, infusing the stew with succulence and incredible flavor.

(Who needs a fairy godmother when you have a pork shoulder?)
  • Pork Loin: Now, if you’re looking for a leaner option, enter the elegant pork loin.

It’s the marathon runner of pork cuts, lean and mean (but not too mean).

While it may lack the natural fat of the pork shoulder, fear not! You can still use pork loin in your Italian pork stew and have a winner on your hands.

Just keep an eagle eye on the cooking time, as it can quickly turn into a dry affair if overcooked. (You will want tender, not tough!)
  • Pork Ribs: Brace yourself, my fellow flavor adventurers, because we’re about to take this stew to new heights.

Picture this: tender, melt-in-your-mouth pork stew infused with the richness and depth that only pork ribs can bring.

(Yes, you read that right) Some Italian pork stew variations welcome these bone-in delights, elevating the dish to a whole new level of satisfaction.

The ribs contribute an extra punch of flavor, making your palate throw a mini party. (Cue the confetti!)

When it comes to choosing your pork cuts, remember this golden rule: a little fat goes a long way.

And here’s a helpful grocery tip, when selecting cuts of meat for your stew.

Opt for ones with marbling and fat content as they play a crucial role in enhancing the overall flavor and tenderness.

As you simmer the stew for hours on end, the fat will work its magic, rendering down to create a luscious and velvety texture that will make you weak in the knees.

So there you have it, my friends—the pork cuts that will make your Italian Pork Stew the star of the show.

Whether you go for the robust pork shoulder, the lean yet flavorful pork loin, or the indulgent addition of pork ribs, your taste buds are in for a treat.

  • 2 pounds pork shoulder, cut into bite-sized chunks

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 2 carrots, peeled and sliced

  • 2 celery stalks, sliced

  • 1 red bell pepper, seeded and diced

  • 1 can (14 ounces) diced tomatoes

  • 2 tablespoons tomato paste

  • 1 cup chicken or vegetable broth

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1 bay leaf

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)

Directions

  • Season the pork chunks with salt and pepper.

Heat a skillet over medium-high heat and brown the pork on all sides for a few minutes. Move the pork into the slow cooker.
  • In the same skillet, add the diced onion, minced garlic, sliced carrots, celery, and red bell pepper.

Cook the vegetables over medium heat for 5 minutes until they start to soften. Transfer the sautéed vegetables to the slow cooker with the pork.
  • Add the diced tomatoes, tomato paste, chicken or vegetable broth, dried thyme, dried rosemary, and bay leaf to the slow cooker.

    Thoroughly mix all the ingredients.
  • Set the slow cooker to low heat and cook for 6-8 hours or high heat for 3-4 hours, until the pork is tender and the flavors have melded together.
  • Once the cooking time is complete, taste the stew and adjust the seasoning with salt and pepper if needed. Remove the bay leaf.
  • Serve the Italian pork stew in bowls, garnished with fresh chopped parsley.

This slow cook pork recipe allows you to enjoy a flavorful and tender dish with minimal effort.

The slow cooking process allows the pork to become fork-tender, while the combination of vegetables, herbs, and tomatoes creates a rich and satisfying stew.
