If it comes out with bits of batter and cake bits attached to it, it means it needs more cook time. You can also use toothpicks to test this, it doesn’t have to be a knife (I just always like grabbing the first knife I see within reach).

Easy Strawberry Cake

Ingredients

  • 1 1/2 cups cups plain Greek yogurt
  • 1 1/2 cups Sugar
  • 6 tbsp Oil
  • 2 tsp Almond extract
  • 3 Eggs
  • 2 1/2 cups Flour
  • 2 tsp Baking powder
  • 3/4 tsp Salt
  • 2 tsp Cinnamon
  • 11/2 cups Fresh strawberries, chunked

Instructions

  • 1. Preheat oven to 350 degrees. 
    2. Grease a 9 by 13 inch pan. Set aside. 
    3. Mix the yogurt, sugar, oil, and almond extract together until smooth. 
    4. Add the eggs one at a time, beating well after each egg. 
    5. Add the flour, salt, cinnamon, and baking powder stirring until smooth. 
    6. Fold in the strawberries and gently stir. 
    7. Pour the batter into the prepared pan. 
    8. Bake for 1 hour (check it after 45 minutes) or until the edges are set and the knife inserted into the center comes out clean.
