Ingredients

  • 1 cup quinoa

  • 2 cups water

  • 1 can of black beans, thoroughly rinsed and drained (15 ounces).

  • 1 red bell pepper, diced

  • 1 small red onion, diced

  • 1 cup corn kernels (fresh or frozen)

  • 1 teaspoon cumin

  • 1 teaspoon chili powder

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • Salt and pepper to taste

  • Optional protein options: grilled chicken, tofu, or your choice

  • Toppings and garnishes: sliced avocado, pico de gallo, chopped cilantro

Directions

  • To eliminate any bitterness, wash the quinoa in a fine-mesh sieve under cold water. Drain well.
  • In a saucepan, mix together the washed quinoa and water. Bring to a boil over high heat.

Then, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and the water is absorbed. Fluff the quinoa with a fork and set it aside.
  • Warm a small amount of olive oil in a frying pan over medium heat. Add the diced red bell pepper and red onion.

Cook the vegetables over medium heat for 5 minutes until they become slightly tender.
  • Add the corn kernels to the skillet and continue to cook for another 3 minutes until the corn is heated through.
  • Stir in the black beans, cumin, chili powder, garlic powder, paprika, salt, and pepper.

Cook for an additional 2 minutes to let the flavors meld together. Adjust the seasoning to your taste.
  • If using any protein options like grilled chicken or tofu, ensure they are cooked according to your preference and slice or cube them into bite-sized pieces.
  • To assemble the burrito bowls, divide the cooked quinoa among four serving bowls.

Top with the black bean and vegetable mixture, along with your preferred protein option if desired.
  • Garnish with sliced avocado, a spoonful of salsa, and a sprinkle of chopped cilantro.

Now you’ve got yourself a delightful and nutritious quinoa and black bean burrito bowl recipe that will make meal prepping for your family a breeze.
